Eggless Nut Butter Cookies

I generally don't bake with sugar (I use honey or maple syrup or applesauce). This often means I am a bit disappointed with my own results. These are pretty good, though. They're a variant and convergence of various online recipes.

Basically nuts are amazing and don't get enough credit.

1/2 c nut butter (I've used almond & PB now and both were good)
1/3 c honey
1 tsp vanilla
1 heaping tbsp applesauce
3/4 c flour
1 tsp baking soda
Salt if you want it (I don't add it)
1/2 c chocolate chips

I baked these in silicone muffin tins at 325. The cookies have a nice slightly biscuity texture and do not taste of applesauce. (This is important.)

NB I did not measure the flour very carefully, so you should use your own judgement.

Eggless Nut Butter Cookies

Rob just made me eggless peanut butter oatmeal cookies last night and they were great. I wish we had been able to make them with maple syrup or sugar. (We have no maple in the house; it's sad.)

Did you use honey? I am all about sweeteners right now.

Those sound really good! You say cookie but you bake them in a muffin tin, albeit silicone: how much batter are you putting in the 'tin'?

About a drop cookie's worth, or maybe more like 1.5? The tins are really just for ease of cleanup and efficiency of dosage.

I use parchment paper on wire racks on top of sheet pans personally, measuring with a teaspoonish Oxo scoop for my portion uniformity. I’ve never considered silicone muffin tins, I should look at them. I bought some silicone sheets, absolutely hate them: cleaning them just drives me nuts.

You may already have seen these, but rationing-era cake recipes are often good for the absence to eggs; I’ve had good luck with the one below (I’m not actually allergic, but sometimes I don’t have eggs on hand and still want to bake something):

This is very relevant to my interest and I have all the ingredients other than honey (could maple syrup be a substitute?)

My main issue with cookies is that I want one. I tend to find them too sweet. This sounds like the sweetness would be nicely offset by other flavours.

Yeah, they're definitely less sweet. I think maple syrup would work -- best thing would be to find a way to cut back the other liquid somehow, but that's tricky here.
