Eggless Nut Butter Cookies

I generally don't bake with sugar (I use honey or maple syrup or applesauce). This often means I am a bit disappointed with my own results. These are pretty good, though. They're a variant and convergence of various online recipes.
Basically nuts are amazing and don't get enough credit.
1/2 c nut butter (I've used almond & PB now and both were good)
1/3 c honey
1 tsp vanilla
1 heaping tbsp applesauce
3/4 c flour
1 tsp baking soda
Salt if you want it (I don't add it)
1/2 c chocolate chips
I baked these in silicone muffin tins at 325. The cookies have a nice slightly biscuity texture and do not taste of applesauce. (This is important.)
NB I did not measure the flour very carefully, so you should use your own judgement.

Date: 2020-04-23 04:02 am (UTC)I use parchment paper on wire racks on top of sheet pans personally, measuring with a teaspoonish Oxo scoop for my portion uniformity. I’ve never considered silicone muffin tins, I should look at them. I bought some silicone sheets, absolutely hate them: cleaning them just drives me nuts.
